Dom Pérignon Brut Champagne 1980
Deep golden in color, almost no bubbles remaining. Nose is high intensity with roasted mushrooms, beeswax, butterscotch, toasted marzipan, roasted pecans, traces of old orange peel, dried apricot, dried mango, dried papaya, banana chips. Palate is surprisingly lively with medium acidity, butterscotch, mushroom, toffee apple, pickled umeboshi plum, dried apricot, plantain chips, crystallized ginger. Long finish. Surprisingly vibrant still and developed. Thinking about this wine for weeks after tasting. 96+ points.
